Day 7- Back to America- Cuisine that is....


Today is day seven of my journey, tomorrow I will have been in Singapore for one week, and will mark the halfway point of my adventure.  Tomorrow I will be working the AM shift and visiting Marina Bay Sands for a meeting with Executive Pastry Chef and JWU alumni Alejandro Luna to tour the property and discuss JWU internship options at the property.  Sunday will be my one day off, and I am planning to take a trip to China Town, perhaps Little India, tour the city proper, etc. A lot to pack into one day!


Vision and Mission
At-Sunrice has a vision of "Advancing culinary arts with integrity and meaning" aims to deliver the best professional culinary arts education.  We create culinary products and sensory experiences for enrichment, education, increased yield for the environment and business.

Values and Culture
In the running of our daily operations, we adopts the 12 Spices approach to permeate and promote our values within the academy. These include sharing our vision, principles, brand values, involvement, teamwork, empowerment, ambassadorship, welcome (hospitality), continuous learning, telephone etiquette, grooming, and protection of our assets.

For problem resolutions, we use the 6-grains process to close culture gaps by identifying the problem, analysing the problem, generating potential solutions, selecting and planning solutions, implementing the solutions and evaluating the solutions.

Now Back to the Show
Today the lesson switches to North America and the northern cuisine of the states.  The students have been looking forward to the lesson.

 nSweet Potato Fries with Cayenne and Cinnamon
nOld-Fashioned Beef Stew
nFried Oysters with Tartar Sauce
nRoasted Turkey with Giblet Gravy
nGrilled Atlantic Salmon with Warm Potato and Watercress Salad
nBraised Red Cabbage
